Ingredients for 6 people:
For the summer rolls:
- 500g shrimp
- 1/2 duck (or any other type of meat)
- 1 large cucumber
- 2 carrots
- 1 onion
- 3 eggs
- 1 mango
- 2 small heads of lettuce or 1 large head of lettuce
- 100g mint, cilantro, or basil
- 300g fresh rice noodles
- Thin rice paper (available at Asian supermarkets)
- Oil for frying
(For vegetarians, the meat can be replaced with tofu.)
For the Dip Sauce:
- Half a jar of peanut butter
- 2 tablespoons chili sauce
- 50 ml soy sauce
- 1 teaspoon salt
- ½ onion
- Sugar and hoisin sauce to taste
Preparation
Step 1: Preparing the ingredients
Wash the shrimp and cook them in a pot of hot water over medium heat (level 6-7) for 15 minutes. Wash the duck and cook it in a pot with water, onion, and 2 teaspoons of salt for 45 minutes, then slice it thinly.
Beat the eggs and whisk them. Add a little salt and fry the eggs in a pan until golden yellow. Then cut them into thin strips.
Clean the herbs (mint and cilantro) and remove any dirty leaves. Wash the cucumber, mango, and carrots, partially peel them, and slice them thinly. Soak the rice noodles in water for 15 minutes and then cook them for 7 minutes.
Step 2: Preparing the Dip Sauce
Chop ½ onion finely and sauté it in a pot with hot oil. Add soy sauce, half a jar of peanut butter, 2 tablespoons of chili sauce, 50 ml of soy sauce, and 1 teaspoon of salt. Bring to a boil and let simmer for 10 minutes, stirring occasionally.
Step 3: Rolling the rolls
Fill a deep plate with water. Dip the rice paper in the water and place it on a flat surface, leaving enough edge for rolling. About 5 cm from the bottom edge, layer the rice paper with the ingredients in the following order: lettuce, mint, cilantro, rice noodles, cucumber, carrot, mango, and egg.
Roll up the long side once. Then, place 3 pieces of shrimp on the rice paper and continue rolling until the end.
Pour the dip into small bowls. Dip the finished summer rolls into the dip and enjoy!
